Springtime + matcha obsession = matcha cookies. SO, if you're also a matcha lover, obsessed with desserts or the color green, or are just looking to whip up something festive for spring or St. Patrick's Day, I've got the treat for you!

These soft & chewy vegan matcha cookies with white chocolate chips are a deliciously unique way to enjoy the popular Japanese green tea powder! They have the perfect amount of sweetness and plenty of matcha flavor. Even better, they're so easy to make and require 0 chill time so you can enjoy them as soon as possible.

For this recipe, I strongly recommend using a high-quality matcha powder, as it will greatly impact the color and taste of these cookies. I like to use ceremonial grade but a good quality culinary grade works well, too. For the batch pictured here, I used Marukyu Koyamaen, but also love to use Ippodo or Rocky's matcha powders as well. Moral of the story: if you don't like it in your matcha lattes, don't use it in your baking!
