happy early new year, Reader! The time in between Christmas and the New Year feels fake but it's also one of my favorite times of year. Some of us are working, some of us are rotting (me) but we're all eating cookies and reminiscing on this past year. In preparation for a new year and new recipes, I always like to look back and see what recipes you *literally* ate up this year. Let’s take a look! Fresh Spring Rolls
Parsley & Cilantro Chimichurri This recipe exploded this year! Fun fact, I was actually going to remove this recipe from the site because I didn't think anyone was seeing it or making it. But then, literally overnight, it skyrocketed to the top of this list. It's great as a condiment, marinade or dressing for everything from veggies to grilled meats.
Grapefruit Gin Spritz One of the most perfect cocktails! The grapefruit adds a zesty punch whereas the sparkling wine that tops it off adds some sweetness. It's officially citrus season so grab some grapefruits to make your own juice for this spritz.
Broccoli Cheddar Soup My personal favorite - inspired by my past obsession with Panera! I'm so glad this is getting the attention it deserves because it's so easy to make and truly delicious. I've even gotten my non-vegan friends obsessed with this one. Plus, if you're not vegan, the swaps are super simple.
Raspberry Sorbet Raspberry sorbet without the need for an ice cream maker?! It doesn't get better than that. This seems to be a top recipe no matter the season. It's easy to make, only calls for a few ingredients and is light & refreshing.
Tomato Soup There are a couple of soups on this list and I'm so glad because I LOVE soup, and I'm so glad you do too. This is another 30 minute, one pot soup that uses dairy-free alternatives (coconut milk) to make it extra creamy.
Lemon Herb Tahini Sauce A goal of mine for 2025 is make more of the basics from scratch (bread, jams, and salad dressings) instead of picking them up at the store. To get the ball rolling, I'm putting this lemon herb tahini sauce on heavy rotation. It's the perfect dressing on salads, buddha bowls or even sandwiches.
Vegan Mac & Cheese (no cashews) I don't know about you, but I've never been a big fan of the cheese sauces made from cashews, carrots and potatoes. That's why this vegan mac & cheese just uses classic alternatives, making it extra creamy while still being nut-free. It's even more delicious with a bit of toasted bread crumbs sprinkled on top.
Vegan Cream of Chicken Soup I don't mean to yell but THIS!!! this recipe is a STAPLE. It's a 1:1 replacement for Campbell's condensed cream of chicken soup, making it easy to use in your favorite dishes, such as casseroles, that call for that. I used to personally just enjoy those as a soup (I feel like I wasn't supposed to though?), so feel free to use this however you want.
Brown Butter Chocolate Chip Cookies Taking the final spot is these brown butter chocolate chip cookies, which went through the ringer this year! I hadn't updated the recipe in nearly 3 years so the blog post was incredibly unhelpful and the recipe far too easy to mess up. However, it has recently been updated and these cookies are now pure perfection!
