Hi, Reader! As the temperature continues to drop, the comfort level of my cooking rises and I've officially decided that there is nothing more comforting than a bowl of tomato soup + grilled cheese. This creamy dairy free tomato soup made with coconut milk and canned tomatoes is comfort food at its finest! The coconut milk will give us that extra creamy texture without adding a coconut-y flavor. Using canned tomatoes ensures that we're getting the best flavor possible since tomatoes are canned at their peak ripeness (fresh tomatoes are pretty bland in the winter). This soup is ready in 30 minutes and is a fast & affordable option for lunch or dinner that's best served with grilled cheese or homemade croutons during the colder months (hayyy)!
